    Cuts of meat

    I only eat chicken, turkey and fish so I have no idea when it comes to meat which is leaner.

    Beef, Bison or Buffalo? Also is Bison and Buffalo meat sold in steaks like beef?

    I believe buffalo is the leanest (Don't know much about bison). They're all sold in steaks, but it's hard to find unless your butcher shop carries them. Usually only sold as ground at your local grocery store.

    Carlos,
    Generally speaking, look for cuts with the word "round" in it somewhere (eye of round, top round, etc). Those cuts come from the leg and are usually very lean. Top round is often the cut you will see sliced in the deli. Of course now, lean meat is generally drier so if you cook a top round steak, for instance, cook it medium rare at most to insure juiciness.

    Keep in mind, the omeg_a-3 to omeg_a-6 fatty acid ratio should be relatively similar within the entire animal, I woul assume. At the very least there would always be more O-3s in any fat found in a grassfed cow as opposed to a grainfed.

    Personally, I buy the cheapest cut I can get, assuming I'm not paying too much for bone weight (I'm not eating the bones yet, at least). London broil is the cheapest grassfed cut at Trader Joe's currently. Sirloin tip steaks were the cheapest I could get when I used to shop at Whole Foods in Meford, NJ.

    Last I heard, grassfed cattle had much lower bodyfat than their grainfed counterparts, intramuscular and subcutaneous.

    So, less fat overall and a better fatty acid ratio. Eat whatever cuts you like and can afford (that last part is the most important).

    I prefer Porterhouse, T-Bone even filet mignon but those are NOT the leanest

    Guys, I believe he's asking about buffalo and bison, and how they compare to beef. Not which cuts of beef are better.

    There is a Whole Foods on Union Square. Any idea if they sell Bison steaks? I have never eaten beef before and for my last month of contest prep Victor wants to change my diet to beef. I dunno if I can bring myself to eat it or if my body will reject it since I've never had it.

    Mentally I can see myself handling Bison or Buffalo better than beef.

    Oops...

    Bison/buffalo is leaner than beef. Not sure whether its sold in steaks or not. I only came across the burgers to date.

    What I'm getting at is if bison or buffalo is a good substitute for beef. If I'll get the same benefits from it.

    Tough question Carlos.

    Here's Cordain's paper on the fatty acid composition of animal muscle, brain, marrow, and adipose tissue. He also compares grain-fed, pasture-fed, and wild animals.

    I always thought deer was the leanest meat....or maybe it has the highest protein content per gram.Its either one or the other.

    I don't understand how you';ve never had beef?!?! You've never had a burger?? DAMN!!!

    If it helps, I used beef throughout my whole prep....a good bit of it. I just used 96% lean ground sirloin. Get it at walmart or pretty much any other grocery store. I substituted it for my chicken in many of my meals with no problems. Hope this helps....

    I'm a fan of ground turkey. Fairly lean, inexpensive, and tasty.

    My family does not eat pork or beef so growing up I've never had it. I'm in the last month of prep and dieting hard so Victor told me to eat beef.

    1st, bison is buffalo. they only eat grass, not grain or feed. they are naturally lean and a bit higher in protien. but....a little spendy. and yes you can get steaks. any cut you can get from beef you can get from bison. be carefull though, many companies sell beefalo. obviously crossbred beef and bison. and yes most are grain feed.
