extra virgin olive oil
If taste is of no concern to you then try flax seed oil. That stuff is some of the most gawd awful stuff I've ever tasted, but it's higher in polyunsaturated fats than extra virgin olive oil.

Extra virgin olive oil...oils with higher proportions of mono-unsaturates and saturated fats. FAR more stable when cooking.
Flax oil is a great COLD source for EFAs (i.e. polyunsaturared- 6 and 9s); however, EFAs are far more unstable when heated (used for cooking) compared to saturated and monounsaturates. This can, potentially, break down the EFAs converting them into a BAD fats, including free radicals. Flax oil is a very poor choice for cooking.
Pam...
Olive Oil is amazing
i like smart balance oil, it seems to be the best for cooking and has little flavor.
