I usually buy skinless/boneless but if I'm buying fresh I'll buy it with the skin then take off the skin after cooking as you said. leaving the skin on while cooking will lock in some moisture and make the chicken more enjoyable to eat w/o changing fat content.
Cooking with the skin on retains moisture.
I cook my breasts (@"I cook my breasts") with the skin on when i'm baking 'em.
If i'm stewing 'em however, I cook 'em in tomato sauce.. So keeping the skin on isn't necessary.
Tomato sauce keeps all the moisture in...so it's a moot point to keep the skin on when stewing.

If you use a sauce to cook your chicken in it should only come up to a light bubble then simmer! Otherwise you would be boiling your meat therefore drawing all the moisture out.

What else I add depends on what mood i'm in...and what flavour I'm trying to achieve.
Sometimes I go spicy: curry poweder, a small amount of garlic, pepper.
Sometimes I go sweet: honey (or brown sugar... or a sweetener if i'm cutting), onion & onion powder, garlic, celery.
Sometimes I go tart: orange marmalade; pepper
Sometimes I dump a shitload of garlic and cilentro in.
etc. etc.
It depends.

I have plain straw-yellow one i use sometimes.
Chicks seems to dig a big nude black dude in an apron cooking 'em dinner.. So new aprons are always welcomed lol
