First, there would be nothing wrong with wishing peace upon Jews. Rather, we do that all the time, such as I just did to you. 
Second, we do not believe that Jesus [as] or Mother Mary [as] were Jews, in the sense of the religion of Judaism.
The Columbia Encyclopedia says about the term "Judaism":
"The term itself was first used by Hellenized Jews to describe their religious practice, but it is of predominantly modern usage; it is not used in the Bible or in Rabbinic literature and only rarely in the literature of the medieval period."
During the time of Jesus [as], the term Jew/Judahite simply meant someone from the tribe of Judah. It was an ethnic tribal reference, not a religious appellation as such.
We believe that Mother Mary [as], Jesus [as], and his disciples were Muslims. The term "Muslim" simply is the Arabic word for "submitter (to God)" and we believe that they all submitted themselves to God, as the Quran says:
"When Jesus perceived disbelief on their part, he said: 'Who will be my helpers in God's Way?' The disciples said: 'We are helpers in the Way of God: We believe in God and bear witness that we are submitters (to God).'" (Quran, 3:52)
The Bible also testifies that Jesus [as] submitted His Will to God, as Jesus [as] said: “not as I will, but as You will” (Matthew 26:39).
The term "Muslim" can have both a specific and general meaning. In specific, it refers to those of the Nation of Muhammad [s], who follow the Islamic Shari'ah (Law). In general, however, the term "Muslim" refers to anyone who submits to the Will of God alone, and thus all of the past prophets were Muslims in the general--if not specific--sense of the word.
