Carrots mixed in with broccoli (steam fresh mixed bags).
Are carrots to high on the glycemic index - causing a spike in insulin levels when not desired?
Basically asking if its better to stick with just broccoli instead of the mixed bags.

As far as vegetables go, carrots are relatively high on the glycemic index (generally any vegetable that has a naturally sweeter taste or is very starchy will have a high glycemic index). However, inasmuch as the amount of carrots needed to spike your insulin is significantly higher than the amount of carrots you may ingest in a typical serving size of mixed vegetables, it shouldn't be a cause for concern unless you are being extremely strict about your carbohydrate intake. Personally, I would just stick to broccoli though (or broccoli with another low-GI vegetable).

There are countless sites with the glycemic index of different foods, but these two actually listed carrots whereas some of the others I looked up didn't specifically list them.
