It's hard to make a healthy chicken salad; I was eating alot while I was running a CKD since I didn't care about the fat content. My recipe is below; you can sub 1/2 fat free sour cream and low/no fat mayo for the regular mayo:
Chicken Breast - you can boil or grill it. Grilled tastes better, boiled has a better texture IMO. I'm not giving quantities here because we all cook different amounts (bulk for the week, etc) - so just giving ingredients. Dice the chicken rather large, about 1/4 - 1/2 inch cubes (whatever you like really).
Celery- I dice it (smaller than the chicken) when raw, and then steam it for just a minute to bring out the flavor
Worcestershire Sauce- a few dashes, enough to flavor
Dry Mustard- about 2tsp per lb. of chicken breast
Mayo (or sour cream and mayo)- mix it in after the other ingredients and make it whatever consistency you like.
Salt and Pepper- to taste. I prefer white pepper in chicken salad
Very basic. You can add any veggies you like in there, i.e. peppers, etc. You can add hard boiled eggs if you'd like, and dijon mustard if you like the mustardy flavor.
