I use coconut oil whenever I cook. It is the one oil I know of that does not loose it's nutrional value when heated up. I use olive oil for flavoring on my salad. As fas as veggies go I am crazy with the leafy greens. I will eat onions and mushroom and stuff like that as well too. I jut don't go crazy with them. My own personal preference.

Olive oil, is good, macedamia (spellcheck) oil is better if you can afford it. For veggies you want fiberous veggies. (Broccoli, colliflour asparagus), Leafy veggies (cabbage, spinach dandilion collard greens) I like to blanch or steam veggies. Not so long that it breaks down and effects nutritional value. Then season lightly with sea salt, or lemon juice or both depending on the veg.

Steam is the way to go for me,just enough to alter the flavor and texture enough so It gives you more variety in your meal planning.Another great way to eat leafy greens like spinich, kale etc.. is to wilt in a pan with juices and spices left from whatevever protien you prepared..Lemon,sea salt and fresh ground blackpepper is the key to avoiding fat filled dressings on greens, add avacado and you wont even miss that nasty ranch dressing!!!
