i'd say quad day, but i devote an entire day to legs, not splitting exercises up.
Squats on your quad dominant day. Hip dominant (hamstring) is better for rack pulls, RDLs, GMs, Hip thrusts ... (all focus on bending at the hips)
I'm big on working out the agonist / antagonist muscles together otherwise known as push / pull exercises together. I work out quads / hams, chest / back, and bi / tri on same days as well using same principle.
Im dividing Squats and leg press each week. Pretty much just trying to get legs in 2x a week to see how it goes for a couple months.
