I usually go with a flank steak. Stay away from Choice and Select grades. While those are considered higher grades, it really means there is more marbling of fats inside the meat.

I had a round steak for lunch, turned out really good. That is very lean as well.

"maverick meat" (ground beef) that is 96/4 or if that's not available 93/7.

    i eat red meat 1x a week.

if you cook it in a pan with spices, you can usually drain out the fat when it's almost done. it tastes great if you put onion/garlic and a little salsa on it.

Best yet, if you can find it and you are specifically looking for ground, which wasn't really stated, go with ground bison.

In australia ground beef is called minced beef. I would have though steak would contain a lot less fat than mince? You dont really know what goes into mince do you?

Lean mince is nothing more than minced beef... (steaks). Get both, it doesn't matter. What matters is that it's lean and you know what you're buying.
