guess you can simply ask them if its fine to use your hands, but i'm sure they won't mind. most restaurant adapt to the local culture instead of sticking strictly to the owner's culture. even the recipe may be slightly different. i always assume that sushi in japan will taste quite different from sushi elsewhere in the world.
personally, i hate getting my fingers sticky and oily.
