A 'New' Steak Has Been Discovered: The Vegas Strip

We're not quite sure that the word "discovered" is correct for a new cut of beef, but whatever you call it, expect to see the "Vegas Strip" (ha, so punny) hitting menus and butcher shops near you. CBS Chicago reports that Dr. Tony Mata, food scientist and beef expert, discovered the new steak in a cut of beef usually ground up into hamburger. Chef Rick Gresh, of David Burke's Primehouse, appeared in the segment, calling the steak "a pretty huge deal," and telling CBS that he's sold as many as 400 Vegas Strips in a single day. How great could it be if they used it for hamburger? Sounds like just a new way to get an extra $3 per pound of hamburger to me. Everyone will buy one at first because it is new but then they will wise up and remember that the best steaks are Porterhouses, Ribeyes and Filets.

I'm a butcher by trade and I swear I discovered this cut like two years ago at work when I was playing around with my pieces of trim. Who knew? I could have patented it and made some decent change and could have gotten out of my shitty job lol.

Families on a tight budget might be more inclined to buy this strip. They'll see it as they're wanting steak, but can't afford ribeye prices. I'm afraid though that this will drive up hamburger meat prices though.

Probably right. Everything is just a ploy to drive up prices on everything. I've watched pistachios go from 6 $ a pound to 8 $ a pound... pork has risen about 40% and chicken is becoming ridiculous. Its just stupid how the prices keep going up and up

If I got to the outlet I get 4kg for 40 $ fresh chicken breast. Grocery store you get 4-5 big (overgrown) breasts for 23 $ or something stupid like that.

I have to translate into lbs since that's how mine is priced. Youre getting roughly 8.8lbs for $40 = $4.55/lb. I just bought a pack of those overgrown breasts you mentioned the other day. $1.99/lb or about $4.40/kg. The chicken prices in your area are double what they are here. Ouch.

That's not too bad of a price. I've been cheaping out and buying the 10lb bags of leg 1/4s for $7.90. Occasionally Sam's will have the boneless/skinless breasts for .99/lb. Pretty sure the birds were juicing though. The chicken breasts look like they came off of a turkey.

Not according to our government. They are saying all the produce and most other commodities prices have stayed the same the last 2 years; thanks to Obama of course. Yeah right, tell that to my wallet.

Yeah, in the last year, meat prices have jumped a lot in Southern California. When I first moved back here about a year and a half ago, I could get a 1lb Ribeye steak for about $6.50. Now everywhere I go, I have to pay at least $8-9 for the same steak ON SALE. Often, I'm paying $12 for it.

Maybe Obama can tell us where he's shopping at?

Pork has the most noticeable increase tho
