I prefer to measure certain foods like rice, potatoes and such in cups. Not sure if there is a specific reason you weigh them just somehting to think about. It seems easier to me.

Depends on how you're supposed to weigh them.
If your diet calculator considers 6 oz of cooked rice as a 220 cal serving, then you'd better as hell not weigh your rice dry.

I have heard people preach over and over to weigh it uncooked.

I weigh stuff I cook individually for each meal (like potatoes or veggies) uncooked. Stuff that I cook in bulk like rice and chicken I weigh cooked. Myfitnesspal calorie tracker has measurements for both so I do what is convenient.

I think if you are consistent about the way you measure it really shouldn't matter. You make adjustments based on your intake.
