I've been doin 12 minute cardio sessions 5 days a week for six months and have gotten fairly cut up. If I change my routine to just 1 hour a week in one sesson will that be just as good?

First, how is 12 minutes cardio? I could understand anaerobic training, but cardio? My understanding is that you need in excess of 20 minutes at your training zone to burn much fat, during the session. Now if you are going high intensity for 12 minutes you will burn fat also, but mostly it will come from increased heart rate following the workout. I would venuture to say that one session would not be as good as 5 because there is no way you could keep a high enough intensity to equal the same calories. Why don't you try 3 45 minute lower intensity sessions on an empty stomach and compare fat loss to your previous method?
