    Meat Tenderzing...................

Recently, I ordered up a variety of digestive enzymes with the goal of reducing some gas and bloating I was experiencing. I have a pound each of Papain and Bromalein. Each aids in the digestion of protein, and can be also used to tenderize meat.

So three days ago, I cut up a Tri-tip roast in thin slices, rubbed it down with generous amounts of Papain, and threw it in a zip lock bag with some Pappies and a little Terriyaki sauce.

Today, I BBQ'd it for lunch. Tender is an understatement. It was so tender, it dissolved in your mouth. No need to use your teeth or any unnecessary chewing.

Although the women said it was good, it was too much.

    Next time, 5 hours tops.

How long did you let it sit in the bag, overnight?

well, I sliced the meat thin, then laid it flat like a pancake on a plastic cutting board. then I generously applied the papain, then rubbing it all together with my hands. then in a zip lock bag, with a tiny bit of pappies, and some teriyaki to moisten things up. then I kneaded the meat in the bag for about a minute, then the bag in a bowl, then in the fridge for three days.

Three days is way too long. next time, maybe fiv e hours max.
