I'm doin a cutting diet now and was wondering what your thoughts were on using a low-carb pasta as an occassional substitute for brown rice?
Also, I was wondering if it was possible to use cheese (parmesan mostly) in the cutting diet also?

Usually as a rule of thumb, dairy is almost completely cut out during a cutting diet.
and for pasta if YOU MUST HAVE pasta, use the whole wheat kind. but there are other things you can use beside brown rice ( potatoes, sweet potatoes, oatmeal is ok, yams)

well oatmeal is better then regular pasta IMO. but i do releize the fiber slows down the digestion of the other wise fast acting carbs

The amount of parmesan cheese put on top of pasta is nothing. It'll add sodium if anything. You might get a gram of fat and likewise a half gram of sodium out of a tablespoon.
I have to read up on this oatmeal stuff, I must be out of the loop, I still utilize it ppwo.
it should be a lean protein and a fat after cardio to continue lyposis. that meal is good to have on days you do not do cardio
