I just got a assistant wrestling coach job at the local high school and don't know how to set up a buliking diet around it. At wrestling I'll get in about 30-60mins of mat time a day, so should I have a pro carb meal before and/or after practice.

Pro/fat being that pwo meals are usually ones very high in carbs.
Adding more wouldn't be productive, but it seems like you have a ton of meals in a day.
