Apple cidar vinegar or asobic acid vs. r-ala
Do theses compare? Is one more desireable or have better effects on lowering the GI of foods than others?

The Vinegar is your best bet at lowering the Gi of a carb source, R-ala can also be taken with carbs, but will not lower the GI. I wouldn't use the Ascorbic Acid as Johan pointed out it may effect insulin .

Better yet, choose foods that you don't have to try and ALTER.
This way there is NO room for ERROR.
