Hey - does anyone have any experience with / info on the nutritional value of Wheat Gluten?
I've got into making it - it's kinda like fake chicken - pretty good tasting really, with a meaty texture - but i seem to remember an article about protein quality and gluten coming pretty low in terms of amino acid profile.
It's so cheap to make (about a dollar to make around 1kg (2lbs)) & has a protein content of around 50-70%.
Anyone got any info ?
