people say your body can only digest 40-50 grams of protein per meal, but how many carbs and fat can your body digest per meal like 2-3 hour in between each one, and does that matter as much as the protein aspect of it?

These numbers will differ greatly amongst everyone just as the protein intake issue. There is no one correct amount as we all have different stats.
