Found this at some web site...hope it helps. I better understand what it does too.
Vitamin C is a water-soluble vitamin, otherwise known as ascorbic acid. Vitamin C is responsible for many functions in your body.
What does Vitamin C do?
Vitamin C is an antioxidant and can protect your body from free radicals, which may cause heart disease and cancer.
Vitamin C is responsible for producing collagen. Collagen is present in your muscles and bones. It is responsible for holding the cells together.
Vitamin C helps your immune system. It helps you heal from scrapes and bruises.
Vitamin C also keeps your gums healthy. People with lack of Vitamin C often develop black, swollen gums otherwise known as scurvy.
People who do not consume enough Vitamin C often develop the following symptoms:
Swollen Gums
Wounds that don't heal
Easy bruising
Bleeding Gums
If you consume too much Vitamin C, it may not be harmful. Vitamin C is a water-soluble vitamin therefore excess amount is excreted in your urine. But it can develop symptoms such as kidney stones and diarrhea because it is an acid.
The average (nonsmoking) person should consume 60 mg of Vitamin C per day. This can be found in 3/4 cup of orange juice. People who smoke need more Vitamin C than others. Their requirement is 100 mg a day.
You can obtain Vitamin C from citrus fruits such as oranges, tangerines, and grapefruits. You can also obtain a significant amount from tomatoes, peppers, broccoli, and even potatoes.
Vitamin C is good for protecting your body. For vegetarians it is even healthier. When combined with iron, iron becomes more absorbable allowing an increased iron intake.

the benifits of megadosing vitamin c is just to many do a search on my name and vitamin c and you will find some very long threads cram packed with info.
But to sumarise.
It boost energy.
It helps to keep joints in shape.
It increases insulin sensitivity.
It decreases cortisol levels.
It kills bacteria and virus.
It keeps blood vessels healthy.
It gets rid of free radicals like no other(since it is one of the few antioxidants that can be taken at any dosage without any danger).
It removes the bad effects from hyperglycemia(high blood sugar).
Its claimed to help the body get rid of heavy metalls.
It boost the positive effect exercise has on cholesterol values(check quoted below since this one was new to me aswell).
The things I have noticed personaly since I started high and mega dosing vitamin c is that I am NEVER sic anymore. My knees are as new again from beeing totaly destroyed, I have more energy ect.
Nowdays I consume around 5-10 grams/day or so. When I am at the highest I consume around 15-20gram/day.
Physical activity is associated with beneficial changes in serum lipids, but exhaustive exercise has been suggested to increase oxidative stress. To test the effect of ascorbate (vitamin C) on serum lipids and the metabolism of urate, which is the most important intrinsic antioxidant, during exhaustive exercise, we performed a randomized, blinded, placebo-controlled study on eight male well-trained athletes. Subjects were randomly allocated to either a group given 1000 mg of ascorbate daily (n=4) or a placebo group (n=4). Fasting serum lipids and urate concentrations were measured before and after 3 weeks of training. Although serum low-density lipoprotein (LDL)-cholesterol levels decreased and high-density lipoprotein (HDL)-cholesterol levels increased significantly in the ascorbate group after the 3 weeks of training, serum LDL-cholesterol levels increased and HDL-cholesterol levels decreased significantly in the placebo group. Furthermore, serum urate levels were elevated significantly in the placebo group; however, these levels did not change in the ascorbate group. When compared with the placebo group, significantly higher serum HDL-cholesterol and lower serum LDL-cholesterol and urate levels were observed in the ascorbate group after training. In conclusion, our results suggested that ascorbate may contribute to the desirable changes in serum lipids during exhaustive training and suggest the significant association between ascorbate and urate under intense training.

I take alot of vitamin C as well - and i've only been sick once in the last two years and it was due to high air conditioning - coming in and out of two extremes.
And i noticed a similar thing with my knees as well , which were ruined from alot of sports and some nasty falls when i was in my teens. -Never thought it was vitimin C related though that they are so much better now...
Question though, can you not necessarily attribute it to working out and possible other minerals you may be taking as well?

My knees where so bad that I was sure I would need surgery on them sooner or later. I couldnt even walk stairs the day after a leg workout because of the pain. I was eating glucosamin ect for atleast a year before I started vitamin c. But when I started the vitamin c my knees where TOTALY healed in just a matter of 4-5 weeks. It was literaly like waking up and having a miracle done on them. I havent had the slightest pain whatsoever since then either.
But besides myself I have never heard of anyone getting such a dramatic effect from the vitamin c so I can honestly not explain it. It might have been some combinatory effect of the glucosamin and the C or something like that but thats just pure speculation.
When did you notice your knees started getting better?
