marinades and rubs for meat and fish
Anyone have any healthy marinades for chicken, steak, lamb fish etc; either dry rubs, marinades or toppings? I need 100% natural ingredients. No montreal seasoning, salt, ketchup, fat salad dressings (unless olive oil & vinegar).
If anyone can add to 1 or more of these with anything specific to help this novice chef out that would be awesome. Help me dress up my food and make it taste good! My goals: super clean food, and cut body fat, gain physical and mental energy.
1. Chicken (i'm thinking as a topping):
a.)garlic, mushrooms, basil, tomato paste/or/olive oil, sauteed-mixed-spread over the top of a cooked chicken breast.
b.)
2. Lamb
a.) garlic, pepper, minced green onion RUB
b.) garlic, pepper, onion, tomato marinated in olive oil and pepper
3. steak
a.) garlic, mushrooms, onion marinated in oil overnight
4. ground beef
a.)
5. cod, mahi mahi, talapia
a.) white wine, orange slices, pineapple marinade
b.) 12 ozs white wine, lime juice
fresh ground ginger root, garlic, basil, thyme
c.)Onion,Limes,Garlic,Oil,Basil
6. salmon
a.) olive oil, lime and/or lemon juice, garlic marinade
b.) splenda brown sugar,paprika, fresh ground black pepper
7. baked potatoes and rice...anything to dress these up so they don't taste so plain?
8. pork

Hopefully they leave it here for a while, it's bound to get a lot more views, though.
Looks good. I have no suggestions but I'd like to try some of your ideas. My chicken is SOO plain these days.

Here's the deal you need something to sort of get this stuff into the meat while you cook it!!!!!!
Get a syringe 18G and lower....inject that shit into the meat and grill not a nasty george foreman grill but an outdoor $30 gas grill with foil on top...no cleaning....
Or in a HUGE pot add green beans, chicken, olive oil, salt, pepper. PARSLEY!!!! chilli powder, thyme, Basil, garlic& onion (both chopped not powder, same with paresly), mushrooms when u turn off the stove and leave in there and stir....and then add seasme oil when it cools down a bit.....
That is some FVCKING GOOD FOOD THERE

i'm gonna try and make a large batch of marinade/rubs taht I can use for a few days till having to make more. hopefully that will make my precise nutritional plan humming along and make it enjoyable
please feel free to throw in any herbs etc taht you think sound good and that you've tried

Grilling adds soo much more taste to the food, usually after work at night, I get out the grill in the back yard, put the meat, do some WW pasta or rice, grab a beer and cook the meat on there a few moments of peace and quiet and a nice BIG meal to accompany it...couldnt ask for more

Try adding more herbs like rosemary and mint to lamb
and mabey some cilantro to you chicken
green onions cut up nice and small always compliment steak, put them on after grilling (always wash green onions/ scallions)
Ginger is another great ingredient, just peel it then grate it use it with garlic,orange juice, black pepper, and a little olive oil and marinate your fish/chicken with itLast edited by Venomous Nemisis; 08-14-2006 at 07:12 AM.

Fat free italian dressing with vinegar injected right into my steak or chicken. Grilling is the shieeet for potatoes meat or whatever! I like steak rubs too
Funny you mentioned montreal because I just got that but I haven't used it yet.
Onions and lemon juice is good with fish along with lemon pepper seasoning. SO GOOD
