I would suggest increasing your carb intake to 1 or 1.5 cups (measured dry) of oats.

    meal 2
    2 cans tuna...pro/64...fat/3...carb/0...cals/300
    3 tbsp natty pb...pro/12...fat/24...carb/10.5...cals/285
    veggies

    No problem.

    meal 3
    8oz chicken breast...pro/50...fat/2...carb/0...cals/220
    1 cup oats...pro/26...fat/10...carb/102...cals/606

    No Problem.

    workout

    PWO nutrition
    prot powder...pro/36...fat/2...carb/4...cals/184
    carb powder...pro/0...fat/0...carb/100...cals/400

Might want to add something for an insulin spike, sugar, vitamin water, etc.

    meal 5
    8oz chicken breast...pro/50...fat/2...carb/0...cals/220
    1 cup oats...pro/26...fat/10...carb/102...cals/606
    veggies

    meal 6
    12 oz ground beef...pro/63...fat/51...carb/0...cal/720

I agree, fat is way to high here. I would suggest going with a leaner meat. This meal could also be a whey/flax shake before bed. You should add some sort of quality fat to the meal to slow down digestion of the protein for before bed. JMO.

    totals...pro/363...fat/109...carb/376.5...cals/4023

Looks like you have the basics all set, I would advise adding some better quality fats, especially since you are heading towards a lean bulk. Also - What are your meal separations? 2.5 hours? You mentioned work is tough, adding the extra carbs earlier in the day will help out your bulking in my opinion.

    Best of luck,

    MuX
