    Pastuerize my own egg whites ?

    hey guys, if i was going to try and pasteurize my own egg whites how would i do it? and are pasteurized egg whites more bioavailable than cooked egg whites ?

    It's probably easier to just cook them, unless you own a pasteurization machine.

    milk is pasteurized by heating at 145 °F for 30 min. I assume it's the same for eggs.

    i would think that it would be easier just to cook it. 30 min vs. 3 min....

    I'm not so sure that'd be too safe. Eggs need to be heated at 165 degrees F to kill Salmonella.
