    cooking yams

I have noticed that that cooking yams longer ant a lower temp makes them allot sweeter. Are they still just as good as when you cook them quick and they are less sweet tasting?

I think the longer you cook them the more starches turn into simple sugers. That's probably why they taste much sweeter. I don't know if that makes them any better or worse for you...
