First stats would be nice and also you definately need to be weighing the food for cutting purposes. How mean much steak is that your eating 6oz or 16oz?? Same with the chicken. For me when I am bulking I usually keep my carbs as high as my protein intake 350-400grams, now when I begin to cut I usually start with 250 grams of carbs and work my way down to carbs only in the morning. I elect to do peanut butter in my postworkout shake as well instead of waxymaize or if I short on money I'll just eat 4 pieces of white bread and a banana when bulking.. Now I'm no diet expert or anything but that is what works for me!! For me it seems better when I progressively let my body off carbs but keep high protein and moderate fat.
