Thanks![]()

Yeah, I hear ya! All the marinades I'm familiar with have oil/fat/sugar in varying degrees. I usually just try get creative with seasoning. Many swear by coconut milk for good taste (and good fats). Unfortunately, all the coconut milk around where I live has a bunch of weird stuff in it I don't trust. I'll do chopped garlic and shaved lemon zest, for example. A little horseradish can be good (not the creamed out sugar filled stuff you buy in a bottle). Parsley, lime juice, onion powder, chopped hot peppers, shallots, cilantro-- you get the idea. Since you appear to not mind a little salt perhaps a soy sauce base for a marinade or rub?
If you have a BW3's nearby I would recommend picking up a 3 pack. I believe each bottle contains 24 1 tbsp servings, and for $10.99 for all 3 I find it to be decently economical. My fav's are Asian Zing, Caribbean Jerk, and Sweet BBQ...Delish!
BW's...a blast from the past.....Awwe college was good times. anyway try low sodium soy sauce.
Why mess with BBQ or any sauce adding sodium/sugars or those un-counted carbs to your diet?
Limes! Squeeze the juice over cooked chicken, marinade the chicken with squeezed limes, brush it on the chicken when grilling, or grate and sprinkle on the grilling chicken.
Christ...I sound like Rachel Ray...

Here is one of my favs
marinade
1/2 cup of lemon juice
1/2 cup of lime juice
1/2 cup of lite soy sauce
1/2 cup of olive oil
let marinade for 4-5 hrs or more. Olive oil is optional, I usually use 1/4 cup or you dont have to use it at all.
give it a shot and tell me what you think.
