Nutrition labels account for the weight of said protein prior to being prepared. I cook all me chicken/beef/pork in mass quantities, and just measure it out whilst I'm packing my daily meals. Form personal experience, 4 oz of uncooked chicken yields right around 3.75 oz cooked.
