    Mashing Sweet Potatos change gi?

    Does mashing your sweet potatos change the gi? If I peel a bunch and make about 10-12 into mashed potatoes for the week because I don't have time to cook everyday and try to only cook two or three nights would that have a higer gi than if I just baked them or boiled them and ate them unmashed?

    If you just mash with out any add ons, then nothing should change bro, your stomach is going to mash the hell out of it anyways.

    Wont change it, and its freakin delicious. Put a little soy milk in there and maybe a couple sprays of fake butter. Phenomonal.

    Thanks guys. I'm getting ready to make my first trial batch now. Just got sweet potatoes on sale for $.49/lb too.

    They turned out great. I made a batch of chunks too. Just peel, boil, and mash. Easy and now I have about 4 days worth in less than an hour.

    yep it does, increased surface area increases the GI. It is better to look at the GL of the food anyway.

    Its like what burns faster if you throw something it into a fire. A block of wood or a hand full of saw dust. The smaller the particles are the more surface area is exposed to be broken down by digestive enzymes. Increasing surface area increase absorption of the food.

    I bet the effect that mashed vs. baked has on blood glucose levels is negligible, but I'm not a scientist.

    Wow, where did you find that at?
    He said he is going to mash it not spread it over the highway brother.
    I understand the "increased surface" concept but its not valid. He is going to mash it and put the whole thing in a bowl or something, therefore and as a fact it will a smaller surface area

    agree!

    This is the same debate people on here have about blended oats vs whole oats. Sometimes people put to much thought into these GI concepts.

    Not anymore! Ill be swallowing whole potatoes from now on!



    Musclescience seems to make sense but chewing the food would probably minimize any difference between the two.
