i need help with a lean bulk diet...

i am currently 168 lbs 5 10' 8% bf i want to add 10-15 lbs of lean mass.

i was wondering its its a good idea to do

meal 1 pro/carb
meal 2 pro/fat
meal 3pro carb
workout
meal 4 pro/carb
meal 5 pro/carb
meal 6 pro/fat

every meal 50 g protein from sources such as fish, chicken, egg whites, protein shake (12 hour dynamtize, casien, whey)

carbs would be 50 grams coming from wheat bread, wheat pita bread, oatmeal, fruits, sweet potato

fats (fish oil caps, natural peanut butter) im not sure how much fat to aim for my pro/fat meals... so i need help with that also, when i cook my meat how do i know how many ounces it is? is there a scale i can buy to measure that?
