Nothing wrong with lean ground beef late at night. At least I've certainly never had any issues wiwth it.
I get the 95 - 97% lean, and drain what little grease cooks out of it. I think beef is among the best choices for late night meals.

wouldnt lean grn turkey be better? 97 - 99% lean
Maybe lower in fat, but also in iron, protein, creatine and flavor. You can't beat the aminos in beef and they also digest slowly so another plus for late night.
The small amount of saturated fat you get from drained lean ground beef isn't a bad or unhealthy thing. Don't forget our bodies need fat even if cutting
