There's 20 AA's, not only because of AA content in foods but because eating the same protein source day in and day out leads to intolerance of certain foods. The body takes all carbs and converts them to glucose so you can eat the same carb source everyday. Now the issues doesn't matter with the carbs now its the vitamin/mineral content of that food you have to take note of since that heavily varies.
