1 - Back when I used egg beaters early in college, I could always taste the difference, it was gross. However, I have never tried the tubs or any other brand for that matter, so I couldn't give you an answer besides egg beaters = ugh.
2 - Uh, active metabolism? You shouldn't drink them if they aren't pasteurized as they will have much less bioavailibility (limited nitrogen uptake from the protein) and you would run the risk of salmonella, however, I don't know of any egg whites that come in a carton/jug that aren't pasteurized.
Call me old fashioned, but I just crack and split my eggs. :\
