    sweet potatoes

I just came from the market and bought 7 huge swt. pot. I was planning having half of one with my dinners. So I have enough for 14 days. I was planning on just baking them and putting it down, skin and all. Any other suggestions?

When I am in a rush, I'll wrap a wet paper towel around them and pop them in the microwave for a minute and 30 seconds or so. I never try taking the skin off, good chance you'll miss out on a lot of the nutrients.

Sweet potato is well nice, but not always a better alternative to regular spuds! I know a great lil fishcake recipe that I personally think tastes better made with normal mash potato as opposed to sweet potato. Sweet potato make great Jacket Potatoes though.

Hmm, sorry to go off track, but how long do they last for? Say you made a load of mash, how long will it keep refridgerated?

Purely from a taste point of view as explained in my previous post. Im aware that Sweet Potatoes are more nutrional, generally taste nicer but aren't always the better preference. Well, for me that is.

I understand. But if I decide to have a soft drink it has to be diet. It really doesnt taste that great if you think about but its better than regular coke with 46g/sugar per can.

I like to cut one into a bunch of cubes-then heat in a skillet with olive oil for about 10-15 mins until soft-have to keep turning them like scrambled eggs. After they are soft enough to eat sprinkle a little brown sugar on them for flavor-DELICIOUS!
