how do mma fighters cut so much weight and still retain so much muscle?

alot of us have seen the ufc and see the differences in muscle and body frames in the same divisions. i was wondering how these guys lose so much weight in very little time. thiago alves cuts from 200lbs to 170lbs in the days leading up to the fight. thats crazy! please help me i cant figure it out...is it water weight? or do they lose muscle too? how safe is this?

How do they do it? Dehydration. Is it safe? I d@mn sure wouldn't do it unsupervised.

Also if you notice, after the weigh-ins, most of those guys that had to cut like crazy start re-hydrating.

They gain most of it back within 24 hours. Its water weight. They dehydrate big time, but once they get back on the water, it comes back fast.
Ive seen guys have to go to the hospital for IV fluids after weigh ins.
