    Question Oils in Meat Prep

    Guys, if you use olive oil to coat raw meat before you put in teh pan or in my case, put on the grill, do you count all the oil you put on it to be 'safe' or do you try to factor in some that will ultimately drip off. So far, i've always just counted teh total amount, but watching it cook today, I noticed quite a bit just dripping off into teh fire.

    Depending on the grill time and the heat applied is what I use. If its a quick cook like 5mins or less I just use about 50%, any longer and I drop it to about 25%. Very little of the oil absorbs into the meat so if you use a paper towel to blot the meat after cooking you be good with 25% or less, IMO.
