    Two options for Ground Beef, which is better?

    Unfortunately, the relative small town I live in (pop = 200, 000) only has 100% lean ground beef (Zero fat gaurenteed) or 90/10 or worse. None of the grocers/butches carry/special make 95/5 ground beef. I have just been using the 100% Lean Ground Beef from a local trusted butcher. The only problem I have is that I Don't have any nutritional information for it, I've just been using the nutritional information of 95/5 and took the fat multiplied it by 9 and subtracted those calories due to my beef having not fat. Obviously I have more protein, but as to how much, no clue.

    Therefore, my question is should I just continue using my 100% Lean Ground Beef and the difference in 50 calories / 5g of protein been negligible in the long run or go to 90/10 Beef since I Have the nutritional information available?

    I'd stick with the fat free (is that even possible with beef?) and supplement a small amount of healthy fat such as with a serving of nuts. 90/10 is too high in general, and too high in saturated.

    Yeah, I don't think 100% fat free is realistic but it must be pretty damn close. Hell, maybe it is true since if the FDA were to test it and find it to be false advertising, they'd be vulnerable to litigation.

    Anyway, agreed 100% with GB - some meat fat is good but I'm sure you're already getting enough from eating other meat throughout the day. Fat free is awesome and just supplement with the "good fats" using the caloric leeway provided therein.

    How is it even possible to extract all the fat out of beef? I've never heard of this as all meat has fat and even the lean 95 - 5 or 90 - 10 ground beef is just ground from leaner cuts of meat. I didn'/don't think its possible to have 100% fat free ground beef.

    How does it taste?

    It is possible but extremely expensive (added labour), so that is why you don't see it sold over the counter. My cousin's family runs a high end restaurant, so he is able to purchase a ton of product at wholesale price from our local butcher. It tastes a little more dry than regular beef, but hardly noticeable with appropriate spices. Sorry I realized my original post was a bit elusive, I didn't mean you could go to any Loblaws or Metro and get 100% Beef, it's just 1 specific local butcher that does a favor for my family.

    Unfortunately I'm allergic to nuts, can I supplement it with a tablespoon of EVOO instead?

    I guess theoretically there could be small traces of fat, but undoubtably less than 1%. I will have to give the owner a call tomorrow and let you guys know the method !

    I will explain the highly expensive and complex procedure required to extract MOST fat from lean ground beef...

    To start with u wanna get good ground beef, 95-97% is gonna be G2G...

    I dont buy in a pack, i get it from the butcher and depending on what he has i pick what i want ground.... Usually some sort of skirt or lean brisket...

    Anyway... Half fry ur mince in a non-stick pan while boiling the kettel...

    Throw ur beef into a collinder/ strainer and then run the boiling water thru the beef (not cold water) and return to the pan...

    You can repeat this as may times as u like but its gonna make ur meat dry, it will however get rid of most of the fat...

    You can even give this a go with cheaper mince but the end result will not be as lean as if u were using 95-97% beef
