I've gone nuts over Slimmer's recipe. Have had them in some form since she shared the idea with me a few weeks back. They are so versatile. Yes as simple pancakes they are light, fluffy and delicious but I also love them as sandwich casings and then in the last week I've discovered they make fantastic wraps.
So if you're not acquainted with the protein packing, easy, peasy recipe then here it is:
All you need: one cup each of oats, egg whites (carton type is just easier) low fat cottage cheese, 2 tsp of baking powder, 2 tsp of truvia or 2 Splenda packets and a dash of vanilla.
First put your oats in the blender and whizz until they are powder. Then add the rest and blend well.
I barely grease a non stick pan or skillet. Each batch gives you 3 servings so that makes one extra large pancake or 3 medium ones. I go for the 3 as the pancakes are easier to turn that way. Top them with some berries (I think blueberries work well, I buy frozen as they're less expensive and thaw as needed). Pour on a little sugar free syrup and then plop a couple spoonfuls of plain Greek yogurt on top. Skim ricotta is a yummy alternative dollop to the yogurt now and then.
I have found it better to make up the entire batch of pancakes at one time so that's 12. I keep them in the fridge separated on a plate by paper towels (that's important as they sweat). Then I can just take out and nuke for a few seconds quickly.
For wraps and sandwich casings just omit the sweetener and vanilla from the recipe. Either use egg beaters instead of just the whites or continue to use the whites and add a pinch of salt.
Wraps - you should get five large ones out of the batch. You'll need a large skillet. Spread the mix out on the hot skillet as wide and thin as you can and turn once first side is golde brown. The wraps are wonderful rolled around grilled chicken or salmon with some leafy greens and light mayo or mustard or instead pour on a little light vinegar based dressing.There are countless ways to fill the wraps and they taste delish.
Sandwich casings - you should get 4 bread sized pieces for each serving so that's 12 from the whole batch. I love these with lean deli meats, lettuce and horse radish sauce.
So let me know if you try the suggestions. Not much to not love about the recipe with the nice slow burning carb source, great taste and protein galore which recent studies reveal causes the body to expend 25 times more energy than when metabolizing carbs or fats. That of course means fat loss.
