Help transitioning from Bulking to Cutting Diet

Ok so I've decided to lay off the gear until and lower my BF% down first until my next cycle.

Basically I've never really cut before.... I've always managed to gain muscle (with some fat) over the years which has brought me to this point. Now I would like to cut down from about 17% bf to low teens..... aiming for 11-12%.

Since I've never dieted for cutting I need some help on cleaning up my diet.

Meal 1 - 2 cups Whole grain cereal, 2cups 2%milk, 6 egg whites, cup of orange juice

Meal 2 - 2 slices whole grain wheat bread, 12oz chicken breast, small can of tuna (26g protein ), cup of cottage cheese

Meal 3 - 24oz of chicken breast, cup of white rice

    Meal 4 - 2 cups oatmeal, 6 egg whites

Meal 5 - 1 cup of rice, 12oz chicken, can of tuna

Meal 6 - Large can of yams, 12 oz steak, cup of cottage cheese

Now as you can see I get ALOT of protein and carbs. This is my bulking diet that I've had for a while now.

This diet has brought me to what I think is the bulk peak for me before I need to cut down.

    My current Stats
    5'11
    250 lbs
    about 17%

My goal is to reach 11-12% bf, My weight I don't care about, I just want to shed the excess fat I have on me (most of it around the waist area)

Now before you guys help me out with my diet keep in mind I take INSULIN with every meal on account of being Diabetic.
This is why it's getting hard to find bodybuilder type diets for diabetics for cutting.

My guess would be to cut the carbs down to 120-150g per day. But I'm not really sure what my protein and Fat intake needs to be.

Anyway I would appreciate any help. Thanks!

Post the macros for the foods, as well as total calories, fats, proteins and carbs for the day!! To better assist you, you'll need to post these things, use fitday.com or livestrong.com to get them if need be.
