    fried eggs !

    why is it when i fry my eggs for breaksfast i feel im doing something wrong compare to say scrambelling them ? today i had 5 whole fried eggs (with olive oil not fat) wholegarin bagel and PB and felt i had cheated myself. makes no diffrernce in how you cook your eggs right ?

    No discerable difference. When you fry your eggs do you leave the yolks runny?

    I always leave runny yolk of I fry them. So I try to always scramble them, to avoid the temptation!

    Does it change the Marcos when you leave it runny? I can't see it changing that much

    The bioavailability of the protein in eggs is almost doubled when cooked, compared to it's raw state.

    The yolk of an egg is where 99% of the flavor is and has a natural & concentrated richness that is crazy!! If you scramble eggs, the yolk is distributed evenly over a greater area where as if you fry/poach it (runny) it is concentrated in one place. It's funny because you can eat a "hard cooked" egg and it will not nearly have the richness a runny yolk will have and it's really nothing different besides a coagulation of protiens that bind together with heat.
    It's actually a big deal, one of the five "mother sauces" is egg sauces (hollandaise) Try this experiment for yourself:
    Next time you have a steak or burger, have one with a hard cooked fried egg and one with a runny, say sunny side or over easy/med and you will DEF see the difference.

    Over all I'm trying to say that it makes no real dietary difference but the flavor profile and the phycological difference is huge!

    None of you guys use pam or some sort of cooking spray 99% of the time????

    I use olive oil. Good for you and makes over medium eggs easy to flip.

    All the time! like Austinite said, I use the spray olive oil also, just depends on my mood lol
