The last thing you want to do is attempt to build muscle and wind up over 20%, blurring any lean tissue you may have built in the process.
I think bananas, etc. are fine. A lot of guys will disagree with me on this, but I stand firm: I like to localize my carbs (fruits, grains, whatever) around my workout/cardio window. Higher energy demands, higher energy intake. The higher carb intake should allow you to work harder, thereby burning more calories overall, which should be your goal.
PS - look into berries of all sorts. Generally higher nutrient density than 'traditional' fruits, with less sugar/calories. Essentially, more bang for your buck.
