Protein Variety! what are your picks?

i cant just eat chicken and beef or ill go nuts. im sure everyone has their way to solve that problem. here are my current protein picks:

(i make each one of them a protein meal)

mussels (so fricken good) can one buy frozen oysters? mussels in bulk can be bought at Asian markets
    Greek non fat yogurt! (bomb!)
low fat cottage cheese (cant find non fat) good
    beef (i got a skillet)
chicken (i can't cook chicken good. how to i keep it juicy, but cook it well?)
    tuna (mainstay while at work)
    egg whites! good breakfast!

    here's what i know i'm keeping out:

    pork (not crazy about it)
lamb (can't cook it well, and it's got lots of fat. it's also pricey and lacks tons of protein)
most kinds of fish (not crazy about fish unless them b1tches is rAw) i could eat tons of raw salmon, but it's pricey and has lots of fat.
i eat peanut butter as a treat (it's got lots of fat)

I like all kinds of nuts (not "deez nuts") including soy nuts, which I recently discovered at Big Lots for only a dollar a bag. Each bag contains 5 servings at 10gr protein per serving. So 50 grams of protein for a dollar. I know soy nuts aren't considered a complete protein, but hell, it's still 50 grams! And they're so damn good! However, they're very dry and you need to drink plenty of water with them. Another thing at said store is their protein powders and protein bars. Very cheap for the amount of protein you get. And a good substitute for rice is quinoa. Very tasty if prepared right.

Egg whites, isolate protein powder, chicken thighs, ground beef, salmon, greek yogurt, casein protein. These are my current sources of protein. Chicken thighs taste way better, are cheaper and higher in calories than chicken breast. Since I'm bulking it works perfect for me.

I love chicken thighs done in a cast iron pan!

If you're bulking on chicken thighs then you should check out this recipe.

Easiest way that I've found to keep chicken breasts moist is by using a steamer or a pressure cooker. Also, Sfla recently started a thread in the lounge that is full of good recipes. One of them mentioned marinating your chicken in wine and lime juice. We went redneck and used muscadine wine and lime juice and soaked it for about 8 hours. Worked really well. Have also used scuppernong wine and lime juice and it worked very well. I think the acid in the lime juice starts breaking the chicken down somewhat because it comes out very moist and tender.
I need to get a new O-ring for the pressure cooker we use for canning veggies, so I got lazy ang grabbed one of the Wolfgang Puck pressure steamer doohickeys off of Amazon and it has done a surprisingly good job. Also, we have a 5 tier steamer that makes it super easy to steam chicken or beef along with the veggies.
Another one I like is canned salmon scrambled in with my egg whites.
