After reading the title I was going to suggest Chris Aceto's books.
If you want to get more in depth scientific explanations of nutrition then I would suggest a college level nutrition 101 and 102 textbooks.

Sure I'll find out what this book is called that my mom sent me in prison. It has a lot of what the science is of the mechanics of the body etc. I.e elbow flexions opposed to biceps curls etc. what works what and it talks about hormones and diets , training etc.. it's cool o, to read if you were clueless about the body .
