Rice and oats - easiest to make, easiest to cleanup - most versatility with spices. I use to do legumes before (chickpeas, lentils, assorted beans). Two of the least expensive options as well.
Pasta, beans, peas and baked potato

I haven't eaten dinner in 5 years but I do eat these crazy ass little small meals 6 or 7 times a day carbs are usually non-existent or rice or oatmeal
One of my favorite meals is one cook cup of oatmeal 10 egg whites and some banana pepper rings red hot hot sauce all mixed up
Well it may sound disgusting and look a little bit off you'd be surprised how good that shit taste

Beans for me.
I make a bean 15 soup with seasonings (cayenne,salt,garlic,etc etc)
add chopped bacon .
Fruit and veg, usually.....
Usually a sushi roll does it for me
