I would never sacrifice the taste of cooked oats for uncooked, no matter what the difference in nutritional value is. But to answer your question I don't think it makes a difference. Since there are no byproducts in natural oats, I highly doubt their nutritional makeup changes when heated.

Would stuff like uncooked oatmeal dehidrate the heck out of you? (we are talking about eating it "dry" here?)
Had a friend who ate coucous that wasn't rehidrated enough... it dehidrated him so bad he thought he was going to die. And when he drank, he blew up from the bloating.
If it's just about oatmeal with cold water, then no big deal... I do it all the time when I go backpacking.

Itīs has higher GI but the nutrition value is the same.
Is it even possible to eat it without any liquid? Man it would stick everywhere in your mouth and throath

Just put on your feed-bag and chow down. You can eat oats dry, but drink water too. A lot of trail mixes and dry granolas are made up primarily of dry oats.
