monosaturated fats are things like olive oil. they're typically eaten to protect your HDL cholesterol levels. polysaturated fats are the EFA's that your body needs to burn off saturated/monosaturated fats and also raise metabolism/circulation. these are your omega-3-6-9 EFA's that you find in fish and flax seed/udo's oil. you can do a ton more reading at udo's page.Quote:
