What matters in a Complete Blood Count?

When my doc orders a "CBC" (Complete Blood Count) there is a lot of data that comes back... what values should I be watching the closest, Hemoglobin and Hematocrit? Here is that the pre-TRT "baseline" one looked like:

I'm sure the "other" stuff matters, but on TRT we need to pay special attention to hemoglobin and hematocrit... hematocrit over 50 is generally the point at which we advocate donating blood or lowering the dose to get that lower. Thick blood is a very serious health concern over time.
