    chicken quesedea

Please don't flame me on the spelling of quesadea too much, but here is a good low fat, high protien one that I stumbled across when the fridge was low:

    2 low fat tortillas
1 package of low fat chicken or turkey lunch meat
1 package of fat free (Kraft) shredded cheese
    1 onion

place layer of cheese on tortilla, then layer slices of meat on top, add diced onion, then another layer of the cheese. Top with other tortilla. Broil in oven until brown on top then flip over to brown other side. Cut into quesedea shapes (just like pizza). I know the cheese doesn't melt quite like real cheese but it saves a hell of a lot of fat. I also add in salsa at times.

Me too I love Chicken Quesadillas from my local Mexican restuarant. Now I'd don't feel so guilty when I go there.
