    Chicken Marinade for A Nice

    Hey bro, here is a little something that you can soak your chicken in over night to give it a little kick. Actually it is from a reciepe that I had posted a while back with chicken ka-bobs. The marinade works especially well with chicken cooked on the grill.
    Here it is.

    2 tbsp each of reduced-sodium soy sauce and brown sugar
    1 tbsp each of olive oil and grated lemon zest ***
    2 cloves of garlic,minced
    1 large shallot,minced
    1-1/2 tspgrated gingerroot
    1 tsp each ground cumin and ground coriander
    4 boneless,skinless chicken breast halves cut into 1 inch cubes
    8 wooden or metal skewers

    To make the marinade. combine all the ingredients except the chicken in a small bowl. Pour the marinade over the chicken in a large,heavy-duty,resealable plastic bag. Make sure all the pieces are coated with marinade. Marinate overnight in the refrigerator

    sounds good! lately i take canned pineapple and [pour the juice over the chix breats and let it chill in the frige till the evening then when i get home i toss it on the grille and just before it is ready add the slice pineapple on top!!
    you can then take the chix and cut up for a salad or just eat with a side.

    on the subject of marinades here is another one i experimented with and it turned out great! its also good cause u can use it either as an overnight marinade, or u can make it and put it on chicken just before grilling (obviously marinade overnight makes it better )

    1 tbsp olive oil
    lots of paprika
    pinch of cayenne pepper (leave out if too spicy for ya)
    lots of tumeric
    lots of freshly ground black pepper
    a pinch of coriander powder

    if u want salt, put it only only whilst grilling the meat, never before.

    ps. the chicken will look very yellowy and red, cause of the indian based spices used.
