    Chicken Foil Pockets

    Hi Guys,

    I'm new here, but here's what I fed justme last night for dinner. hehe...

    Ingredients (makes 2 pockets)

    2 Cups Cooked Brown Rice
    2 Skinned Chicken Breasts
    1 Cup Cut up veggies, I like broccoli
    4 tbsp Low fat italian dressing
    Minced Garlic (optional)
    Salt & Pepper to taste
    Tin Foil

    Preheat oven to 450 F.

    Spray 2 sheets of Tin Foil with low fat cooking spray and spoon 1 cup of rice onto each foil. Season the chicken breasts with salt, pepper, and garlic if you wish. Put the chicken breasts on each mound of rice. Then put the veggies on top. Drizzle 2 tbsps of italian dressing on the veggies. Then fold up the sides of the tin foil. Start with the long end and fold in the short sides. Put it in the preheated oven @ 400-450 F for about 30 mins. It makes a great quick lazy dinner.

    Welcome to the board Justminime. I use that same recipe all the time. I add some chilli powder, and Tony's with a dash of sage and thyme on the chicken. Tastes great.
    Hope you get what you want out of this utopia. The members are great and the knowledge is abundant.

    Thanks for the warm welcome Pheedno!! I think I will have to try it with chili powder next time I make it.

    One thing I forgot to put about this recipe, don't forget to put your foil package on a cookie sheet or something before putting it in the oven!!
