the only way i know of is by adding fat (i.e. oil) and sugar to it.

The fat and oil is what gives the crunchy texture.

Sugar caramelises...and fat more or less bakes it.

I tried to bake it without a fat source but it only gets crunchy after it burns

yea i did what i said i would do ...turned out not so good..kinda crunchy because of the splenda and cinamin i sprinkled on top...but not hard crunchy like the granola bars. kinda dried out too...too much work took lik 25 min baking only for 25g precooked oatmeal...il just stick to my bowl of oats lol

Well, what you need is something to gel and hold everything together.
What you could do is this.......

use the oatmeal, some splenda, cinnamon...and try some other good spices, like Nutmeg, or Apple Pie Spice....throw in some egg whites to make it stick together.
This may sound wierd..but, I've become quite experimentive dieting...and with my food background...somethings I know work...not well mind you...we do have a bland diet...anyways....try some Diet jello in a flavor you would like. Using jello in small amounts with water would work...but, only if your using an oatmeal bar cold...and instant oats...easier to eat.

Play with my recipe...and see what you get.

    5 egg whites
    1 ½ cups Splenda
    Cinnamon to taste
    Sugar free syrup to taste
    1 cup quick oats
2 cups of old fashion oats (add more if you find a little runny)
    Peanut Butter (optional)

Bake at 450 till lightly brown…approximately 10 minutes

The sugar free syrup comes in many flavors...the kind of syrups they put in coffees...like at Starbucks.
There's Torani sugar free, DaVinci sugar free....etc.
You could also use a sugar free maple syrup/pancake syrup to make it sticky.
The secret is too bake for a short amount of time at a low temp...to not dry it out.

Hope this helps...and, let me know how it turns out!

    Nice suggestion Pink...

The eggwhites will certainly hold it together...but without a fat source it's likely the whole thing'll burn before the oats are fully cooked (i.e. crispy)...the peanut butter looks good in there as a fat source...tho it too burns at a fairly low temp

I'm interested in seeing how it turns out.

Just try the section with all the spices or where baked goods are sold...you'll find cinnamon, pumpkin pie spice, apple pie spice, or, if you can't find them; pie spices are really just a combination of cinnamon, nutmeg, and cloves.

Yes, if your not careful, they will burn....I usually turn down the oven, and underbake....the majority will hold, but you do get the occasional flaking!

let me know if you try something different...always looking for something new!
